Well hello, Mama’s!
If you read my last post then you already know about my Vegan eating challenge. If you haven’t then, by all means, go back and check it out! It has been much harder than I anticipated to go vegan. The meat is not as much of a challenge as I thought it would be. That’s not to say that aren’t any challenges, because there are! I hope to one day start VLOGGING about my mama journey. It’s on my to do list. One day at a time, I guess. 🙂
Weaknesses of a Beginner Vegan
There were a couple of times in the last week and a half that I might have fallen off the wagon with the cheese. This week I will be going to Walmart because I hear that they have vegan condiments and cheese, since this is where I am having trouble. I really think I am getting better as time goes by. I am learning new ways to shop and what to look for on the labels. I have to put way more thought into snacking than ever before. Thank the lord that I can have sunflower seeds! I also found some Sweet Potato Chips this week at Dollar General and of course Hummus Dip, and some Snapea Crisps at Schuck which were also pretty good for snacking at work.

I actually bout this Magic Bullet online from Amazon about a year ago and hardly ever used it till now. Some morning when I’m in a hurl and don’t feel like cooking my avocado I just do a smoothie. This one was avocado, banana, cutie orang, spinach, and frozen berries with almond milk and a tsp of Splenda. It was delish!
Fun With Vegan Cooking
In the past, I always thought that vegans sat around eating nothing but salad. Well let me tell you Mama’s something about me. I despise salads! I need a hot meal! If I ever ate salads before, they had to have ranch dressing. I am so glad that they invented YouTube for me to find all different kinds of new vegan recipes so I don’t have to eat salads. I have been having a lot of fun trying out different ways to cook different veggies. I was never very big on beans but I am learning to incorporate everything in to my diet that I can, to insure that I am getting enough nutrients to keep up with my active Mama lifestyle. Here are some pics of some of the things I’ve made so far.
I’m not a big fan of avocado raw but it turns out that a baked avocado reminds me a lot of a fried egg… So it is my go to in the AM with my coffee, of course!
This was garlic broccoli and tofu and sweet potato and cauliflower rice. This was my first time cooking and trying tofu and until I added the soy sauce and Worchester sauce, I hated it. Turned out good in the end.
This was my first time cooking fake meat. It was a veggie sausage that I cooked with mushrooms and spinach and I added Worchester sauce and soy sauce and almond milk.
I love tomatoes and mushrooms so these are some of my favorite “whip it up” recipes. I loved the portabella tortellini which I found at Aldis.
Energy of a Beginner Vegan
So in addition to changing my diet to vegan, I have also began to workout as well. Wellness in the body and in the soul. I have been doing Beachbody TurboJam with Chalene Johnson. It’s fun and it involves a little dancing and kick boxing. Kicking butt with a twist! lol I love it! I started January 28th and have been working out at least 5 days per week. I have slowly worked my way up from a 20 minute workout, which or course felt like death at first. Now I am working out for a little over an hour. Yay me! I have also lost 10 lbs in 3 weeks. My goal is just to fit back into my old clothes. I just want to be the size I was before I had 2 kids in 3 years. I want to have as much energy as my little ones or at least enough to just keep up with them.
